Quinoa Breakfast Bombs!

Ok, I have to admit I am not a quinoa fan so I was excited to find this recipe. I would have never known that it mixes so well with all these delicious ingredients. I meant come on, everything tastes better with Rotel. I use that stuff on everything :) These little bombs are awesome and so healthy. Eat up!


Ingredients:
  • 1 cup cooked quinoa, warmed
  • 1 cup ground turkey or chicken sausage (cooked)
  • 1/2 cup chopped fresh spinach leaves
  • 1/3 cup diced red onion
  • 1/2 cup shredded mozzarella or cheddar
  • 3 egg whites
  • 3/4-1 can of Rotel 
Directions:
  • Preheat oven to 350 degrees and spray a mini muffin tin with cooking spray.
  • Cook quinoa according to package directions. (tip: can cook with chicken broth for added flavor)
  • Cook  sausage and set aside.
  • In a medium bowl, mix the warm quinoa with remaining ingredients. Stir to combine.
  • Spoon mixture into mini muffin tins, filling to the top.
  • Bake for 20 minutes or until golden brown on the edges.
  • Remove from oven and let cool for 10 minutes.
  • Run a small knife around the edges to loosen and pop out of the muffin tin.
  • Makes 30-40 mini bombs!
