Red, White, & Blueberry Chia Pudding

Not Yo Mama's Puddin!!!

Kid Tested ~ Vegan Approved :)


Ingredients

· 1 cup coconut milk beverage

· 1 cup frozen blueberries

· 1 cup raspberries

· 2 cups water

· 15 TBS of chia seeds

· 4 TBS agave syrup

· 1 TSP vanilla


Directions
1. Blend the blueberries and 1 cup of water. Add 2 TBS agave and 5 TBS of chia seeds. Stir into bowl and place in refrigerator for 30 minutes

2. Blend raspberries and 1 cup of water. Add 2 TBS agave and 5 TBS of chia seeds. Stir into bowl and place in refrigerator for 30 minutes.

3. Mix coconut milk beverage, vanilla, and 5 TBS of chia in bowl (agave optional) and store in refrigerator for 30 minutes.

4. Take you 3 puddings and get artistic in your layering and presentation.

5. Keep refrigerated.



45 minutes
6-8 servings
Vegan, gluten-free

Grilled Corn, Avocado and Tomato Salad w/Honey Lime Dressing

YES YES ~ SALAD CRUSH :)

There is nothing like an AWESOME salad to make my day. This one has all the right ingredients to make my tummy happy. Definitely trying this one ASAP!!!!


INGREDIENTS:
1 pint grape tomatoes
1 ripe avocado
2 ears of fresh sweet corn
2 tbsp fresh cilantro, chopped
HONEY LIME DRESSING
Juice of 1 lime
3 tbsp vegetable oil
1 tbsp honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper


DIRECTIONS:
Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy. Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool. Slice the tomatoes in half. Dice the avocado and chop the cilantro.
HONEY LIME DRESSING

1. Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.
2. Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10-15 minutes to let flavors mingle.

Yummy Raw Chocolate Bomb

Attention Chocolate Lovers ~ I've got your FIX!!!!

This rawliciousness can be enjoyed as a dessert OR breakfast! It's raw, vegan and free of all gluten, dairy, soy and added sugar and packs a pretty mighty dose of superfood magic from raw cacao, maca and reishi. Not only do you get a quick chocolate fix, it gives you a natural boost of energy. Enjoy!

Ingredients:
  1. 1 frozen Banana 
  2. 1/2c organic strawberries (fresh or frozen)
  3. 2/4 c Almond Milk
  4. 2 Heaped Tbsp. raw cacao
  5. 1 Tbsp. raw cacao nibs
  6. 1 tsp maca

Directions:

  1. Blend all ingredients together. 
  2. Put in a glass and garnish with sliced banana, strawberries, raw granola (get one at your health food store or make your own by mixing your favorite seeds, coconut flakes, nuts and sprouted grains), raw cacao nibs, and fresh mint.
  3. Eat on the spot or make it portable by using a mason jar. Yumm!!!

 

Cool Tip!!!
Bring the Raw Chocolate Bomb with you wherever you go by separating the smoothie and the toppings into jars, and combining when ready to eat.

Ingredients:
2 tablespoon(s) olive oil
2  tablespoon(s) red wine vinegar
3/4 teaspoon(s) salt
1/4 teaspoon(s) coarsely ground pepper
1/2 cup(s) loosely packed fresh parsley leaves, chopped
1/4 cup(s) loosely packed fresh mint leaves, thinly sliced
1 pound(s) (large) cooked shrimp, shelled and deveined
4 (about 2 1/2 pounds) ripe tomatoes, cut into 1-inch chunks
1 English (seedless) cucumber or 4 Kirby cucumbers, cut lengthwise into quarters, then cut crosswise into 1-inch chunks
1 small red onion, diced
1/2 cup(s) (about 2 ounces) crumbled feta cheese

Directions:
1. In serving bowl, whisk together oil, vinegar, salt, and pepper; stir in   parsley and mint.
2. Add shrimp, tomatoes, cucumber, and onion to dressing in bowl; stir to combine. 
3. Sprinkle salad with feta to serve. 
4. Serve at room temperature or cover and refrigerate to serve later.
