Quinoa
Breakfast Bombs!
Ok, I
have to admit I am not a quinoa fan so I was excited to find this recipe.
I would have never known that it mixes so well with all these delicious ingredients.
I meant come on, everything tastes better with Rotel. I use that stuff on everything :) These little bombs are awesome and so healthy. Eat up!
Ingredients:
- 1 cup cooked quinoa, warmed
- 1 cup ground turkey or chicken sausage (cooked)
- 1/2 cup chopped fresh spinach leaves
- 1/3 cup diced red onion
- 1/2 cup shredded mozzarella or cheddar
- 3 egg whites
- 3/4-1 can of Rotel
Directions:
- Preheat oven to 350 degrees and spray a mini muffin tin with cooking spray.
- Cook quinoa according to package directions. (tip: can cook with chicken broth for added flavor)
- Cook sausage and set aside.
- In a medium bowl, mix the warm quinoa with remaining ingredients. Stir to combine.
- Spoon mixture into mini muffin tins, filling to the top.
- Bake for 20 minutes or until golden brown on the edges.
- Remove from oven and let cool for 10 minutes.
- Run a small knife around the edges to loosen and pop out of the muffin tin.
- Makes 30-40 mini bombs!
